Triple Chocolate Chunk Muffins

If you’re a chocolate lover like me, then you’ll be sure to love this recipe! Satisfy your sweet tooth with one of these healthy chocolate chunk muffins. With only 67 calories per muffin, they are a perfect sweet treat to satisfy your cravings!

They are quick and easy to make; you just need to throw the ingredients into a blender and bake and you’re done. It’s the simple!

What You’ll Need:

  • 35g oats

  • 70g egg whites

  • 40g plain greek yogurt

  • 50g unsweetened applesauce

  • 6 tbsp unsweetened cocoa powder

  • ¼ cup splenda granular

  • 1 tbsp stevia

  • ½ tsp vanilla extract

  • ½ tbsp distilled white vinegar

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ½ cup water

  • Pinch of salt

  • 42g (3 tbsp) dark chocolate chips

  • 0-calorie nonstick cooking spray

How to Prepare:

  1. Preheat oven to 350 degrees fahrenheit.

  2. Put all ingredients into a food processor or blender, expect for the chocolate chips. Blend until there is a uniform consistency.

  3. In a muffin tin, spray 8 spaces with 0-calorie nonstick cooking spray.

  4. Add ½ of the chocolate chips to the mixture, and pour into the muffin tin evenly.

  5. Bake for 10 minutes.

  6. Remove from oven and add the remaining chocolate chips to the muffins.

  7. Bake for another 2-3 minutes.
