Rotisserie Chicken Breast Sandwich Bowl

If you’re looking for a low-calorie, savory snack, look no further! I call this the sandwich bowl; it’s my favorite rotisserie chicken breast sandwich, but without the bread. There is by no means anything wrong with eating carbohydrates, but by eliminating the bread from the sandwich, it’s a super low-calorie yet very voluminous bowl of deliciousness.

I eat seasonally. Right now cucumbers and tomatoes are growing like weeds so I find myself having to incorporate a large amount of them into my daily diet as to not waste them!

Note: Swap out the chicken breast for turkey breast, or another lean, reduced-sodium lunch meat if you prefer a different protein source.

What You’ll Need:

  • 100g cucumber, sliced

  • 100g tomato, sliced

  • 25g onion, chopped

  • 50g rotisserie chicken breast lunch meat

  • 15g (3 tsp) spicy brown mustard

  • Salt to taste

How to Prepare:

  1. Chop cucumber, tomato, and onion and place in a bowl.

  2. Tear the lunch meat into smaller pieces. Add to bowl.

  3. Top with mustard and salt.
