Protein-Stuffed French Toast

I love french toast, but it’s usually a dish that is high in carbohydrates and low in protein. To meet my fitness goals, I need to make sure my protein intake is quite high, so often a high carb, low protein meal doesn’t fit into my diet.

Thankfully, you can add powdered protein to just about any sweet dish to increase the protein content. Though french toast is generally seen as a breakfast food, I think this is a bomb dinner idea. I ALWAYS crave something sweet after I each meal, except when the meal tastes like dessert, like this protein-stuffed french toast!

What You’ll Need:

  • 3 slices of 100% whole wheat bread

  • ½ scoop protein powder of choice (I used French Toast Whey from MyProtein)

  • 60 mL unsweetened almond milk

  • 90g egg whites

  • 30g reduced fat cream cheese

  • 1 tsp stevia

  • Cinnamon to taste

  • 2 tbsp sugar free syrup

  • 2 tbsp PB fit

  • ¼ banana

How to Prepare:

  1. In a bowl, add the protein powder, almond milk, and egg whites. Mix until completely blended.

  2. Soak each piece of bread in the batter and place in a nonstick frying pan over medium heat. Cook until desired texture on each side.

  3. Mix softened cream cheese and stevia. Spread on french toast like butter.

  4. Mix PB fit with water to create desired consistency. Spread or drizzle on french toast.

  5. Top with sliced banana, cinnamon, and sugar free syrup.
