Shredded Chicken-Stuffed Spaghetti Squash

I hope you’re hungry because holy volume! I am all about my meals being very voluminous. I mean, the more food the better, right?

This dish is the result of having a rest day from the gym, loads of vegetables in the kitchen, and wanting to get creative—and it turned out extremely delicious.

What You’ll Need:

  • 1 medium spaghetti squash

  • 226g (8 oz) chicken breast

  • 2 whole carrots

  • 1 medium white onion

  • 90g (1 cup) frozen corn

  • 40g mozzarella cheese

  • 20g (8 tsp) grated parmesan cheese

  • 3 cloves garlic, minced

  • ¼ tsp crushed red pepper

  • ¼ tsp garlic salt

  • Salt and pepper to taste

How to Prepare:

  1. Preheat oven to 400 degrees fahrenheit.

  2. Cut the spaghetti squash in half and scoop out the seeds. Salt and pepper the squashand place flesh side down in a glass baking dish. Add a few tablespoons of water to the dish. Microwave for 10 minutes.

  3. Meanwhile, peel and slice carrots into ½ inch pieces and place in a frying pan over medium-high heat. Cook for a 5 minutes before adding a few tablespoons of water. Turn down to medium heat and let simmer for 10 minutes.

  4. In a nonstick frying pan over medium heat, cook chicken breast seasoned with salt and pepper. Let cook on each side for 5-6 minutes or until fully cooked. Shred chicken.

  5. Chop onion as desired and place in a large bowl off to the side. Add the frozen corn, chopped garlic, garlic salt, and crushed red pepper.

  6. Take the spaghetti squash out of the microwave. With a fork, scrape out most of the flesh of both halves and place into the large bowl with the onion, corn, and spices.

  7. Add the shredded chicken, the mozzarella cheese, and ½ of the parmesan cheese. Mix well.

  8. In the glass baking dish, place spaghetti squash boats rightside up and fill each with half the mixture. Sprinkle with the remaining parmesan cheese. Season with salt and pepper if desired.

  9. Bake for 15 minutes.
