Protein-Packed 10-Minute Breakfast

Introducing my go-to breakfast for the last 6 months - a savory egg scramble or, if you will, breakfast tacos! This protein-packed dish takes 10 minutes to make and is a perfect idea for breakfast, brunch, or, if you’re like me, an any-time-of-the-day meal because you could eat breakfast foods all day long. As always, this is fully customizable. Add any vegetables or spices you'd like. Want a lighter breakfast? Opt for 1 egg and more egg whites, 2 slices of turkey bacon, and omit the corn tortillas.


What You’ll Need:

  • 3 slices turkey bacon

  • 2 large eggs

  • ⅓ cup egg whites

  • 30g broccoli, chopped

  • 30g onion, diced

  • 50g tomato, diced

  • ¼ avocado, diced

  • 1 tsp sriracha

  • 1 tbsp ketchup

  • 2 small corn tortillas

  • ½ cup (114g) low-fat cottage cheese

  • Spices: paprika, basil, salt, minced onion, vegeta


How to Prepare:

  1. Pop the turkey bacon in the airfryer for 6-8 minutes at 450.

  2. In a frying pan over medium-high heat, cook the broccoli and onion for 3 minutes before adding the scrambled eggs and egg whites.

  3. Add all desired spices to the egg scramble.

  4. Once the eggs are nearly cooked, chop the bacon and tomato and add it to the scamble.

  5. Transfer to a plate and drizzle with hot sauce and ketchup if desired. Add avocado on top.

  6. Scoop some cottage cheese on the side and top with a dash of salt and paprika.

  7. Serve with 2 corn tortillas.
