Healthy Avocado and Egg Breakfast Sandwich

Two of my favorite things are brunch and avocado. So things can’t get much better than having avocado with brunch, am I right? This sandwich is delicious any time of the day, but it’s a perfect, quick option to whip together in the morning.

What You’ll Need:

  • 1 multi-grain light english muffin

  • ½ avocado

  • 2 egg whites

  • Tomato, sliced

  • 1 tsp reduced fat cream cheese

  • ¼ tsp everything but the bagel seasoning (Trader Joe’s)

  • Olive oil cooking spray

  • Crushed red pepper and ground black pepper to taste

How to Prepare:

  • Over medium heat, lightly spray frying pan with olive oil. Cook 2 egg whites so that they are patties, seasoning them with crushed red pepper and ground black pepper.

  • Cut the english muffin in half and toast.

  • Add ½ tsp cream cheese to each english muffin half. Spread evenly.

  • Add an egg white on each english muffin half.

  • Thinly slice tomato and place 2 pieces on each half.

  • Top each half with ¼ avocado and everything but the bagel seasoning.
