There is ample opportunity to get creative with these. Don’t like beets? Don’t add them! Try adding chopped cucumber or peppers. Customize it to your own taste!
What You’ll Need:
2 tomato basil rice cakes
1 5-oz can of tuna in water
15g (1 tbsp) light mayo
10g onion
28g (5 slices/1 serving) bread and butter pickles
Salt and pepper to taste
29g (4 sliced/1 serving) sliced pickled beets
How to Prepare:
Drain tuna and place in small bowl.
Add mayo, salt, and pepper to tuna and mix well.
Finely chop beets, pickles, and onions. Mix into tuna.
Divide half the mixture onto each rice cake.
