Pumpkin Pie Chocolate Chip Oatmeal Cookies

HAPPY HALLOWEEN! What better way to celebrate than baking some sweet treats!

Even though the autumn time is pumpkin season, it’s cookie season all year round. These chewy chocolate chip cookies taste like pumpkin pie and guess what? They’re healthy! With only 65 calories per cookie, you will be sure to satisfy your sweet tooth and fuel your body with healthy fat, fiber, and complex carbohydrates.

What You’ll Need:

  • 1 cup oats

  • ½ cup whole wheat flour

  • ¼ tsp pumpkin pie spice

  • 1 tsp ground cinnamon

  • Pinch of ginger

  • Pinch of nutmeg

  • Pinch of salt

  • 1 tsp baking powder

  • 3 tbsp stevia

  • ½ cup pumpkin puree

  • 1 tsp vanilla extract

  • 1 tbsp coconut oil, melted

  • ½ cup sugar free maple syrup

  • 1 tbsp dark chocolate chips

How to Prepare:

  1. Preheat oven to 325 degree fahrenheit.

  2. Mix all ingredients in a large bowl and stir/beat until completely mixed.

  3. On a very lightly greased baking sheet, divide mixture into 12 small balls.

  4. Bake for 10-12 minute.
