One Pan Fall Chicken Dinner

Dinner made simple - throw everything onto a pan, pop it in the oven and dinner is served! This is the perfect autumn dish that the whole family will love.

This dish is not only full of color, but it’s full of taste and contains loads of nutrients. Eating healthy is NOT boring and certainly not a huge time commitment either. This dish makes 4 servings, perfect for meal prepping.

What You’ll Need:

  • 1 pound chicken breast

  • 2 cups butternut squash, chopped

  • 2 cups sweet potato, chopped

  • 2 cups brussel sprouts, halved

  • 1 small red onion, chopped

  • 2 tbsp olive oil

  • 4 tsp honey

  • Spices: vegeta, parsley, rosemary, nutritional yeast, chopped onion, steak seasoning, salt, pepper

How to Prepare:  

  1. Preheat oven to 450 degrees Fahrenheit.

  2. Line large baking sheet with aluminum foil. Spray with cooking spray.

  3. Spread out all vegetables evenly on the pan (butternut squash, sweet potato, onion, brussel sprouts).

  4. Drizzle with the olive oil and desired spices. 

  5. In a dish, mix chicken breast with spices, making sure it’s coated nicely. Place chicken on top of the vegetables.

  6. Bake for 30 minutes or until vegetables are tender and chicken is cooked all the way through.

  7. Drizzle the final product with honey.
